Digging Burdock...

This farm has been around since 1798. So much here seems so firmly planted in history—and strength. The Burdock is a worthy, honorable brut. The new ones (within two years) have wonderful medicinal benefits—and can make great salads, adds to soups and vegetable stir fries. I know only of the root (studying the leaves as I go). It's a starchy wonder that I've tinctured (digestion), pickled and cooked with a good deal. This old guy is one of MANY that live here. He's too old to eat, but an incredible snapshot of strength and nature.
